Delicious Butternut Squash Soup Recipe

This creamy and flavorful butternut squash soup is perfect for chilly days. Simple to prepare, it will warm you from the inside out!

Ingredients

  • 1 medium butternut squash, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • ½ cup cream or coconut milk (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
  2. Add the diced butternut squash, ginger, cinnamon, salt, and pepper. Stir the mixture for a few minutes.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 20-25 minutes or until the squash is tender.
  4. Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup into a blender in batches.
  5. If you want a creamier texture, stir in the cream or coconut milk and heat through before serving.
