Delicious Butternut Squash Soup Recipe

Ingredients
- 1 medium butternut squash, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
- ½ cup cream or coconut milk (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion becomes translucent.
- Add the diced butternut squash, ginger, cinnamon, salt, and pepper. Stir the mixture for a few minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 20-25 minutes or until the squash is tender.
- Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup into a blender in batches.
