Parsnip and Apple Soup Recipe

Ingredients
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 500g parsnips, peeled and chopped
- 2 apples, peeled and chopped
- 4 cups vegetable broth
- 1 teaspoon ground ginger
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and garlic, and sauté until the onion is translucent.
- Stir in the chopped parsnips and apples, cooking for about 5 minutes.
- Add the vegetable broth and ground ginger, bringing the mixture to a boil.
