Parsnip and Apple Soup Recipe

This delightful parsnip and apple soup is a warm, comforting dish perfect for any season. The sweetness of the apples beautifully complements the earthy flavor of the parsnips.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 500g parsnips, peeled and chopped
  • 2 apples, peeled and chopped
  • 4 cups vegetable broth
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, and sauté until the onion is translucent.
  3. Stir in the chopped parsnips and apples, cooking for about 5 minutes.
  4. Add the vegetable broth and ground ginger, bringing the mixture to a boil.
  5. Reduce the heat and let it simmer for 20-25 minutes, or until the parsnips and apples are tender.
  6. Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup in batches to a blender.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.
