Ripened Tomato Soup Recipe

This ripened tomato soup is a delicious, hearty dish perfect for any occasion. Using fresh, ripe tomatoes ensures a rich flavor that will warm your soul.

Ingredients:

  • 6 cups ripe tomatoes, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 teaspoon sugar (optional)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, sauté until the onion becomes translucent.
  3. Stir in the chopped tomatoes and cook for about 10 minutes, allowing them to soften.
  4. Pour in the vegetable broth and bring the mixture to a boil.
  5. Reduce the heat and let it simmer for 20-30 minutes. If using, add sugar to balance acidity.
  6. Use an immersion blender to puree the soup until smooth, or blend in batches using a regular blender.
  7. Season with salt and pepper to taste.
