Ingredients

  • 2 cups of diced root vegetables (potatoes, carrots, parsnips)
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup grated cheese (such as Gruyère or chedder)
  • 2 tablespoons olive oil

Instructions
