Sweet Potato and Pear Soup Recipe

This delicious sweet potato and pear soup combines the natural sweetness of both ingredients, creating a warm and comforting dish perfect for any time of year.

Ingredients:

  • 2 medium sweet potatoes, peeled and diced
  • 2 ripe pears, peeled, cored, and chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley or chives for garnish (optional)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until translucent.
  2. Add the garlic, sweet potatoes, and pears to the pot. Sauté for about 5 minutes, stirring occasionally.
  3. Stir in the ground ginger, cinnamon, salt, and pepper.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and simmer for 20-25 minutes, or until the sweet potatoes and pears are tender.
  5. Using an immersion blender, purée the soup until smooth. (Alternatively, carefully transfer to a blender in batches.)
  6. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley or chives if desired.
