Celeriac Soup Recipe

Celeriac, also known as celery root, is a unique vegetable that adds a wonderful flavor to soups. Here’s a simple and delicious recipe for celeriac soup that you can try!

Ingredients

  • 1 medium celeriac, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 4 cups vegetable or chicken broth
  • 1 cup cream (optional)
  • Salt and pepper to taste
  • Fresh herbs (like parsley or thyme) for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, cooking until softened.
  2. Add the diced celeriac and potatoes, stirring for a few minutes.
  3. Pour in the broth, bringing the mixture to a boil. Reduce heat and simmer for around 20-25 minutes, until the vegetables are tender.
  4. Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only a portion of the soup.
  5. If using, stir in the cream and heat through. Season with salt and pepper to taste.
  6. Serve hot, garnished with fresh herbs.
