Ingredients
- 1 medium celeriac, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 4 cups vegetable or chicken broth
- 1 cup cream (optional)
- Salt and pepper to taste
- Fresh herbs (like parsley or thyme) for garnish
Instructions
- In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, cooking until softened.
- Add the diced celeriac and potatoes, stirring for a few minutes.
- Pour in the broth, bringing the mixture to a boil. Reduce heat and simmer for around 20-25 minutes, until the vegetables are tender.
