Sweet Potato and Coconut Soup

Ingredients
- 2 large sweet potatoes, peeled and diced
- 1 can (400ml) of coconut milk
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and grated ginger, cooking for an additional minute until fragrant.
- Stir in the diced sweet potatoes and pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the sweet potatoes are tender.
- Add the coconut milk and blend the soup using an immersion blender until smooth. Alternatively, you can carefully transfer the soup to a blender in batches.
- Season with salt and pepper to taste. Heat the soup through if necessary.
- Serve warm, garnished with fresh cilantro.
