Leek, Fennel and Celery Soup Recipe

This delicious and healthy soup is perfect for a comforting meal. The combination of leeks, fennel, and celery creates a unique flavor profile that is both savory and aromatic.

Ingredients:

  • 2 large leeks, cleaned and sliced
  • 1 medium fennel bulb, chopped
  • 3 celery stalks, diced
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable or chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as thyme or parsley) for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the leeks, onion, fennel, and celery. Sauté for about 5-7 minutes until the vegetables are softened.
  3. Stir in the garlic and cook for another minute until fragrant.
  4. Pour in the broth and bring the mixture to a boil. Reduce the heat and let it simmer for 20-25 minutes.
  5. Blend the soup until smooth using a hand blender or in batches with a regular blender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh herbs.
