Mushroom and Celery Soup Recipe

This comforting mushroom and celery soup is perfect for a cozy meal. It combines the earthy flavors of mushrooms with the crisp freshness of celery, resulting in a creamy and delicious dish.

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups fresh mushrooms, sliced
  • 3 cups celery, chopped
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add diced onion and garlic, sautéing until the onion is translucent.
  2. Add the sliced mushrooms and chopped celery; cook until the mushrooms are tender.
  3. Pour in the vegetable broth, bringing the mixture to a boil. Reduce heat and let it simmer for about 20 minutes.
  4. Using an immersion blender, puree the soup until smooth. Alternatively, transfer it in batches to a blender.
  5. Stir in the heavy cream and season with salt and pepper. Heat through for a few minutes.
  6. Serve hot, garnished with fresh herbs if desired.
