Cauliflower, Carrot, and Parsnip Soup

This hearty and nutritious soup combines the delightful flavors of cauliflower, carrot, and parsnip to create a warming dish perfect for any occasion.

Ingredients:

  • 1 medium head of cauliflower, chopped
  • 2 large carrots, peeled and diced
  • 2 parsnips, peeled and diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent.
  2. Add the chopped cauliflower, carrots, and parsnips to the pot, stirring well to combine.
  3. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 20-25 minutes, or until the vegetables are tender.
  4. Use an immersion blender to blend the soup until smooth, or transfer it to a blender in batches. Blend until creamy.
  5. Season with salt and pepper to taste. Serve hot, garnished with freshly chopped herbs if desired.
