Cauliflower, Carrot, and Parsnip Soup
This hearty and nutritious soup combines the delightful flavors of cauliflower, carrot, and parsnip to create a warming dish perfect for any occasion.
Ingredients:
- 1 medium head of cauliflower, chopped
- 2 large carrots, peeled and diced
- 2 parsnips, peeled and diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until the onion is translucent.
- Add the chopped cauliflower, carrots, and parsnips to the pot, stirring well to combine.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 20-25 minutes, or until the vegetables are tender.
- Use an immersion blender to blend the soup until smooth, or transfer it to a blender in batches. Blend until creamy.
